THE RECIPE : ALISON ROMAN’S SPICY VINEGAR CHICKEN OVER TOMATOES

- Bone in, Skin on chicken thighs (3-4 lbs)
- Kosher salt and fresh cracked black pepper
- Olive oil (two tbsp and extra to drizzle)
- Crushed red pepper flakes (1 1/2 tsp or more if you like extra spicy like me)
- 1/2 cup white distilled vinegar
- Red or yellow onion (1)
- Cloves of garlic (4)
- Fresh tomato (1 pound)
I am positive that you can make this. And I am even more positive you should, especially while tomatoes are in the last weeks of their prime. I had it with no sides, granted they weren’t missed, and a big glass of milk. Weird? No. Everyone who can drink milk. Should drink milk. And I stand by that, I grew up not being allowed to leave the dinner table until my glass of milk was finished. Now it has become second nature that my strong bones and I enjoy a glass most nights still. A nice glass of white wine would definitely work too! (That’s right, 21 years old right here)
